Chef White has been an advocate for traditional New Mexican cuisine for longer than anyone. In a full-length interview, Steve talks to Jim about his early days promoting food through radio and later TV, right and wrong ways to assess a restaurant, and why Steve would definitely kick Gordon Ramsey out of his kitchen.
